Sounds very solid, and your GMAT is absolutely fine. Given that you are underrepresented it could be even lower. Definitely apply.
Wholeheartedly agree that you should turn your attention to other elements of the application. Start brainstorming stories to share in your recommendations, the main essay, start researching why Stanford (talking to people - doing informational interviews), think about the background essay
