Why is E out of scope? We need to find a reason for the higher rates of cardiovascular diseases in the group that consumed a vegetarian diet as compared to the group that consumed a normal diet.
E is clearly giving a reason as to why that could happen.

Also how can we infer that consuming processed foods that are high in sodium and unhealthy fats leads to cardiovascular disease?
No information is given in the passage to infer this.
Can we just infer this kind of specific knowledge from outside the passage?

It’s not a general fact like sun rises in the east that gmat assumes that everyone knows
