Answer to 1st Question - I think 1 hour of exercise everyday is enough to maintain a healthy state of mind and body. But depends on the amount of time u can devote given your current schedule.
Answer to 2nd Question - A carbohydrate diet combined with protein, vitamins shall be sufficient. It should be a balanced diet based on your current work so that it can keep u energetic. But definitely not fatty foods, as it will make u unhealthy.
